Why I started

I’m Galina. I got into fresh milling because I love to bake and because I care deeply about what goes into my family’s food. The more I learned — through people, through research, through articles like this one from Bread Roots — the more I understood that wheat isn’t the problem. It never was.
God designed the whole wheat berry with 40 of the 44 nutrients the human body needs. What changed is what we did to it. Commercial milling strips the bran and germ — the most nourishing parts — so flour can sit on a shelf for a year without spoiling. Then a handful of synthetic vitamins get added back and it’s called “enriched.” That’s not food the way it was designed to be.
Once I understood that, there was no going back. I now mill 100% organic whole grain berries fresh to order, the way bread has been made for thousands of years. I mill more than my family needs, and I’d love to share it with yours.
